In this guy’s defense, he probably wasn’t the only one who was skeptical about the concept of a cake with vegetables in it. I just assume that most people skeptical about vegetable cakes just refuse to eat them, rather than assuming it’s some kind of well-known, worldwide practical joke.

But putting vegetables in desserts is actually a long-standing tradition, and I’m not just talking about people who put kale into everything. In addition to carrot cake, we have zucchini bread, pumpkin pie, and sweet potato pudding, and there was even a time when potato candy was popular. I’m not even joking.
